Five refreshing spring cocktails

THE NIGHTS are getting lighter and the air is getting warmer, so why not celebrate with a homemade and refreshing cocktail. Here are five ideas to get the creative cocktail connoisseur juices flowing:

1. Cucumber mint gimlet

Cucumber mint gimlet is a gin based cocktail naturally sweetened by cucumber, mint leaves, lime juice and syrup. It is simple, and quick to make (recipe from

Per cocktail
  • 2-inch slice of peeled cucumber, halved and then quartered
  • 10 mint leaves
  • 1½ teaspoons light agave nectar or simple syrup
  • 1 lime, juiced
  • 1½ ounces gin, preferably Hendrick’s
  1. In a cocktail shaker, muddle the cucumber, mint and agave nectar until the cucumber offers no more resistance.
  2. Fill the shaker with ice, then pour in the lime juice and gin. Put the lid on your shaker and shake until the cocktail is thoroughly chilled, about 20 seconds.
  3. Strain the mixture into a martini glass. Garnish with a tiny sprig of mint, if you’d like.

2. Apple and elderflower cocktail 

Apple and elderflower cocktail is, again, gin based. With fresh apple juice and sweet elderflower, it is perfect for sitting in the garden on a warm spring evening (recipe from elderflower and apple


  • 250ml gin
  • 200ml elderflower cordial
  • 1l cloudy apple juice
  • apple slices and ice, to serve

3. Tequila sunrise margarita

Tequila sunrise margarita is fruitful in flavour, and is bound to get you enjoying the sunsets/sunrises if you aren’t already. (Recipe from


Fresh lime wedge (optional) $
Margarita salt (optional)
1/3 cup fresh lime juice* $
3 tablespoons orange liqueur
3 tablespoons orange juice $
2 tablespoons tequila
1/3 to 1/2 cup powdered sugar $
3 tablespoons club soda or lemon-lime soft drink $
2 teaspoons grenadine


1. Rub rim of a chilled margarita glass with lime wedge, and dip rim in salt to coat, if desired.

2. Pour lime juice, liqueur, orange juice, tequila, and powdered sugar over ice in a cocktail shaker. Cover with lid, and shake until thoroughly chilled. Strain into prepared glass. Add club soda or lemon-lime soft drink for a little fizz, if desired. Top with grenadine. Serve immediately.

*1/3 cup thawed frozen limeade concentrate may be substituted for fresh lime juice. Omit powdered sugar, and proceed with recipe as directed.

Note: For testing purposes only, we used Cointreau for orange liqueur and Jose Cuervo Especial for tequila.

4. Passion Fruit Daiquiri

Passion Fruit Daiquiri is slightly more exotic than the normal strawberry version. This rum based cocktail, in its cheery colour, is a perfect fit for the season. (Recipe from


  • 34cup passion fruit juice
  • 23cup light rum
  • 6 tablespoons brown sugar
  • 3cups crushed ice

  1. Combine all ingredients in a blender. Process until smooth.
  2. Pour into martini glasses and serve immediately.

5. Paradise cocktail

– 1 1/2 oz gin
– 1 oz apricot brandy
– 2 oz orange juice


Simply shake these ingredients together to get this delightful cocktail
